Corn and Shrimp soup

If it is as cold in you town as it is here in Dallas you might try this delicious soup this week.

INGREDIENTS:

  • 2 pound small shrimp, peeled and deveined
  • 5 15 oz cans  Whole Kernel Corn
  • 5 15 oz cans Cream Style Corn
  • 1 stick butter
  • 2 cups diced onion
  • 1 cup diced celery
  • 1 cup diced green bell pepper
  • 4 cloves garlic minced
  • 2 cans (15 ounce) Tomatoes
  • 1 can (10 ounce) Rotel
  • 2 cans (5 ounce) V-8 Juice
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes

In a large sauce pot, melt butter. Add onions, celery, bell pepper and garlic and sauté until onions are tender, about 6 minutes. Add raw shrimp and sauté until they are just pink. Add all canned ingredients. Season to taste. Bring to a boil, reduce to simmer and cook for approximately one hour.
