Ok- so far so good on getting back to healthy in 2011. I do not do breakfast and that is a problem I am told. I found 2 recipes I could even do. Enjoy!  Both recipes under 250 calories.

Herbed Cheese and Tomato Bagel: mix 1/2 cup low fat cottage cheese with 2 tsps each of parsley, basil and chives. Dash of pepper. Serve on 1 toasted whole-grain bagel and 2 thick slices of tomato. I made up the cottage cheese mixture and put it back into the original container for keeping. The mixture is full of flavor.

Vanilla Maple French Toast with Sauce:: Mix 1 whole egg and 2 egg whites, 1/4 tsp vanilla extract and 1 tsp maple syrup. Dip 2 slices whole-grain bread into mixture. Spray skillet with cooking spray. Cook 3-4 mins each side. Mash 1/4 cup raspberries or strawberries and add 1 tsp lemon juice. Use the berry mixture for your syrup over your french toast. I found 3 lbs of frozen strawberries in the freezer section of the grocery for $5.00. I used some and thawed the rest for the family to enjoy. I again premade the mixture and sauce for the week day mornings. Breakfast is all done really for the week.

I have to have flavor if I am making this a lifestyle change. I had the french toast for lunch, its my favorite too. I hope you enjoy.
