When Is A Scone Not A Scone? Berry Scones Recipe

I have never been a fan of scones, finding them dry and unappealing for the most part.  Last weekend my husband decided to make scones, much to my delight.  NOT.  I wasn't delighted, I was confused...why would anyone want to make scones?

Well he did...and they were fabulous!  I don't know how he does it, but he has the uncanny ability of searching through recipes and combining them to create a great end result.

 BERRY SCONES by Rick

Place stick of butter in freezer for 1/2 - 1 hour prior to starting. 

ingredients2 C flour (we used all purpose)

1/4 C sugar

1 tsp baking powder

1/4 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1 stick butter (8 TBSP)

3/4 C blueberries

3/4 C strawberries (about 5 berries) cut into small pieces

1 large egg

2/3 C milk (we used unsweetened vanilla almond milk)

1 tsp vanilla

Preheat oven to 400 degrees.

Mix flour, sugar, baking powder, baking soda, cinnamon and salt.  Use a grater to grate the butter into the flour mixture.  Work butter in, using fingers to create a crumbly mixture.  Add berries.

Whisk together egg, milk and vanilla.  Use a fork to mix milk mixture into flour mixture forming large clumps.  Press dough together and form a ball.

Place dough on a lightly floured surface and form into an 8" circle about 3/4" thick.  Sprinkle lightly with sugar and cinnamon.

Cut circle into 8 triangles and place 1" apart on lightly greased cookie sheet (we used parchment paper).

Bake about 18 minutes.

Sharon, I always buyscones at Starbucks. I feel they are not as sweet as other pastries but I have never made them and even have never tried to find out how to. Your husband's recipe doesn't look too complicated.

I too was never a big fan of scones until I started buying them from the girl next door when I had the restaurant. Rick's recipe looks similar in proportions, but I think the "secret" was the unsweetened vanilla almond milk. I never would have thought of that. Also he used a generous portion of berries. Sounds yummy.

Ellen:  Sounds very healthy!  If you haven't tried adding blueberries, they are highly beneficial and very tasty!

Lou:  They are delicious!

Anna:  They are not hard to make at all... You should make some and save all that money Starbucks is charging you, lol!

John:  We don't have regular milk in the house, so he didn't have much choice, LOL!  The generous amount of berries really does add to the appeal!

Roger:  He is a very good cook, and apparently baker too.  He is making jambalaya today...that should be interesting.

Sharon, I did a batch or two with blueberries, another batch with apples and cinnamon, one with orange rinds and cranberries, and for my kids a raspberry white chocolate batch. None are left at this moments! LOL

I actually love scones.....Starbucks sells a lemon scone that is yummy....but Rick's look YUMMY with that cup of coffee!!!

Sharon--How nice that your husband came up with this!  My husband cooks, but never uses recipes.  I love scones--especially the ones Starbucks sells.  I always figured they would be difficult to make, but it looks like I was wrong!  Saving the recipe to try out!!

Your husband is special!  There is a brand mix in a bag called Sticky Finger.  You can find them at Cost Plus world market.  They have become a christmas/hanukah morning tradition in our home.  They come in lots of great flavors like lemon poppyseed and cherry.  Easy to make and very delicious.  Cost 4.99 a bag.

Pat:  My husband doesn't usually use recipes either....he is a great improviser.  He will sometimes scan through recipes to get ideas.  I drove him a little crazy with this one because I knew if they were good I was going to post the recipe so I needed to know exactly how much and I needed to get pics.  He is not used to working under those conditions, LOL!

Ana:  Very special!  I don't know of a Cost Plus in our area, but I guess I don't need the mix if I have my own baker, LOL!

Well Sharon I have to agree with Judy.  :D  I am bookmarking this because I too am not a fan of scones but it includes my favorite things so one day maybe I will give it a try.  :-)

A few months ago I went on a search for the best scone recipe and found that the one in Joy of Cooking worked best for me. I went through several others that were hard to manage and turned out like hockey pucks....but I found my joy in the Joy of Cooking.

Debra:  I hope you do give the recipe a try some time.  They are very good.  The berries make them very moist.

Carol:  My Joy of Cooking cookbook is a prized possession. It was a wedding gift from my Nana in 1976 and she wrote a sweet little note on the inside.

Hi Sharon~I enjoy scones, but my husband is not a big fan.  The recipe looks pretty easy to follow and love that you shared photos!  I'm going to give them a try!  Maybe my husband will like them too!  :-)
