For my Saturday Foodie Post, here is another dish I made a few nights ago with Cod. I was in a "I want Mexican food" kind of mood, so here's what I came up with.
Cod Fillets that I sprinkled with some cayenne pepper, a little garlic powder and salt.
Into a hot cast iron skillet with some olive oil they went, where I browned them on each side. Probably about two minutes per side.
I had made up some white rice, and while the water was boiling I added some Rotel Diced Tomatoes, with green chiles and lime.
After the fish was browned, it went into a 350 degree oven, topped with a little Monterey Jack Cheese. I cooked it just until the cheese melted and the fish was cooked all the way through. Probably another five minutes.
As the fish was finishing up in the oven, I heated a stir fry pan with a little olive oil. Baby spinach got tossed in, along with a dolop of some Onion and Pepper Relish that I get at the Harry and David Store...this was cooked to a light saute.
Once everything is done cooking, serve up with some diced green onion and cilantro on top, with a side of lime and a dolop of sour cream topped with avacado slices.
