More-Than-A-Side Dish Couscous Recipe - I found a box of couscous in the back of my pantry that I had never opened.  I can't even remember when I bought it.  But, apparently at the time, I felt the need to buy and cook it.  I've only had once before and thought it was kind of bland.

I really enjoy putting flavors together and, well, baby spinach was on sale and I recently discovered Feta cheese.  I know!  How on earth had I missed that one?!

Here's a recipe I created yesterday and it turned out to be one of my favorite side dishes.More-Than-A-Side-Dish Couscous Recipe

Ingredients

  • 1 tblsp. Olive oil
  • 2 slices of bacon, chopped
  • 1 tblsp. crushed roasted garlic
  • Pinch of red pepper flakes
  • 2 Baby Portabella mushrooms, sliced
  • 2 handfuls baby spinach, washed and drained
  • Cooked Couscous, enough for two servings
  • 1/4 cup Tomato & Basil Feta Cheese, crumbled
  • Salt to taste

Instructions

  1. Put olive oil in pan. Add bacon. Cook til crispy.More-Than-A-Side-Dish Couscous Recipe
  2. Add garlic, red pepper flakes and mushrooms. Stir about a minute.
  3. Add baby spinach and continue stirring for another minute or until spinach reduces.
  4. Stir in cooked couscous and mix well.
  5. Salt to taste.
  6. Top with Feta cheese.
My husband got creative, too, and made some fantastic chicken kabobs with chunks of chicken breast, bell pepper, red onion, fresh pineapple chunks and baby porta bella mushrooms.  Together, this dish is out of this world good!

Hi Pamela!  So glad you joined us here in Fellow Foodies!  Ya know, I've only had couscous once that I can remember also.  Baby spinach and feta is a staple in our house!  DEFINITELY going to be trying out your recipe!

Hi Lielani - Thanks!  I'm going to try something similar to this except using Orzo in place of Couscous. I'll let know how it turns out.  I thought it might make a good cold dish.

This really sounds great!!!  I really like couscous and usually add a few things to spice it up like green onions..... but I am going to have to try your recipe with tomato & basil feta cheese and spinach.  It sounds wonderful.  Thanks for sharing this great recipe!!!

Hi Linda - I'm going to try this same recipe and use some Orzo in place of the couscous.  I think I'll keep the veggies fresh instead of cooking them and make the dish more of a salad than a side dish.
