My 4 year old son Nathaniel is celiac and so is my father in law and my brother in law so we do a lot of Gluten Free cooking and baking in our family. One of my all time favorite cookbooks is Easy Gluten Free Baking by Elizabeth Barbone. I have wasted a lot of time and ingredients making gluten free foods that were real clunkers but I have had amazing success with every recipe of hers that I have tried.
I even made my husband and my wedding cake from a recipe in her book and you would never have known that it was GF unless someone had told you! (I know, who is crazy enough to make their own wedding cake? But when you have all of the food issues my family has, your options are limited!)
My boys and I made Elizabeth's Tye Dyed Cupcakes for my son Zachary's 8th birthday and they were a huge hit with all the kids, celiac and not. I was really excited when I saw on her Facebook page that she was experimenting with a GF tye dyed cookie recipe based on her fun cupcakes.
Elizabeth posted this great video of her appearance on her local TV station in Albany WNYT. She shows how to make they really fun cookies and also tells you how to make them if you aren't GF.
