Kansas City Chicken ChiliMy Mom's  "KANSAS CITY CHICKEN-CHILI" RECIPE

It's raining like the dickens in Westlake Village, California! Great afternoon to enjoy the fireplace and slow cook my Mom's family recipe for "Kansas City Chicken-Chili". It's so easy and you probably have the ingredients on hand! If not, improvise!

Ingedients:

  • 2 Chicken breasts (Cooked, diced or shredded. I throw them in with some water, salt, pepper in a dutch oven on the stove and just simmer for a long time until tender, then shread. If you don't have enough time, just bake or even cook in microwave and dice up!)
  • 1/2 or more Chopped onion
  • Fresh or refrigerated Garlic (or just a little powder)
  • Chili Powder, cumin, salt pepper (OR Use a package of Lawrey's or Chili-O Seasoning Mix)
  • 2 cans chopped/diced Tomatoes
  • (if desired - 2 TBSP chopped canned chipotle peppers. My husband doesn't do peppers, so I leave this out)
  • 1 can Black Beans (somewhat drained)
  • 1 can Kidney Beans (somewhat drained)
  • 1 can Pinto Beans, or double up on other beans
  • SECRET INGREDIENTS:  1 CAN TOMATO SOUP & a few squirts of KETCHUP (That's what gives this chili a Kansas City taste!)

Use a large Crock Pot or big Dutch Oven:

Plop it all in your cooker and bring to a bubble. Start out with minimal spices in the beginning. Turn down heat and simmer all afternoon, adding pinches of spices as you go along. You can even sprinkle in a few drops of Tobasco, but not much!

(Special added ingredient:  It can get kind of soupy when it cooks, so to stretch the recipe and make it dense, I add some cooked elbow or penne pasta. It's great without it, too!)

Serve with a dollop of sour cream, sprinkle with a little chives or scallions if ya got'em..

Kathy - Sounds delicious ..... my hubby loves chili but I am not sure I can convince him to try chicken chili (we eat a lot of chicken in our house) he likes the old fashioned kind with beef/hamburger in it

David - there is something about using shredded or diced chicken that makes this yummy!
