The pizza at Coal Vines is delectable! Large pizza at Coal Vines We tried their 'white pizza' with sausage. The white mounds are Ricotta cheese -mmmm mmmm good!

Owners Bret Springs and Zach Martin came across the recipe for Coal Vines Pizza during their time in Dallas Texas.A gentleman they worked with in the restaurant business there introduced them to his unique recipe. Originally from New York, the retired police officer went into the restaurant business first in Las Vegas, and later in Dallas. He got the idea of cooking the pizzas on coal fired heat from his years in New York. (Bret assures me that they use a special filter in the chimney) The pizza crust comes out crisp, the sauce is tasty and the toppings are both high quality and fresh.

Bret is originally from Overland Park, KS and attended Rockhurst High School. Zach hails from Wichita KS. I'm very happy they decided to bring their cullinary skills back to Kansas City.

Coal Vines Kansas City is located on the corner of Ward Parkway and Jefferson, next door to the Granfalloon. Map Coal Vines. Stop in for a pie next time you're on the Plaza. Oh, did I mention their extensive wine list?

I’ll bet the coals are something good like mesquite or hickory. We have a place here called Ottavio’s Italian Ristorante that cooks their pizza over hickory coals. It’s excellent!

The coal is actually real chunks of anthracite, Jim - just like the kind used to heat homes and propel train engines in the past. That's why the owner was sure to explain that they used a special filter to catch the smoke going up the chimney.

Hmmm,  Bret did tell us a little about the ingredients used. As you know, top quality ingredients make all the difference when cooking. Most people don't have a coal fired oven in their home so that would make it a little tricky even if you knew what ingredients to use.
