"Snappy Meal with a Spicy Twist"

We use a lot of Fish and Chicken in our diet and when we meal plan.  We try to plan our meals for a month at a time and that way it makes weekly shopping easier.  So if certain meats are on sale we can plan meals with those meats, that will help us save on our budget.  The meal choice for today's recipe is a new one for us... we all enjoyed it so much that I wanted to share it with you!

Snapper with Chipotle-Thyme Sauce

Hands-on Prep:  15 minutes  Cook:  27 minutes  Serves:  4

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium red onion, thinly sliced
  • 1 garlic clove, minced
  • 15 cherry tomatoes, halved
  • 1 chipotle en adobo, seeded and chopped
  • 1/4 teaspoon dried thyme, crumbled
  • 1/4 teaspoon salt
  • 1/8 teaspoon greshly ground pepper
  • 2 (1/2-pound) red snapper fillets, skinned and cut crosswise in half
  • 1/2 cup reduced-fat sour cream

Instructions:

  1. Preheat the oven to 350 degrees F.  Spray a 7 x 11-inch baking dish with nonstick spray. 
  2. To make the sauce, heat the oil in a large nonstick skillet over medium heat.  Add the onion and garlic; cook, stirring occasionally, until softened, about 5 minutes.  Add the cherry tomatoes, chipotle en adobo, thyme, salt, and pepper; stirring occasionally, until softened, about 2 minutes.  Transfer the tomato mixture to a bowl and let cool to room temperature. 
  3. Place the snapper fillets in the baking dish in a single layer; top evenly with the sauce.  Cover the dish tightly with foil.  Bake until the fillets are just opaque in the center, about 20 minutes.  Divide the fish and sauce among 4 plates and garnish each serving with a dollop of the sour cream.

Per serving (1/2 fillet, about 1/4 cup sauce, and 2 tablespoons sour cream):  202 Cal, 9 g Fat, 3 g Sat Fat, 0 g Trans Fat, 72 mg Cho;, 368 mg Sod, 7 g Carb, 2 g Fib, 23 g Prot, 64 mg Calc.  Points value: 4.

ZAP IT:  The somewhat fiery tomato and chipotle sauce is also very tasty served over grilled chicken breasts and thinly sliced grilled flank steak.  Make a double batch of the sauce and refrigerate half in an airtight container up to 4 days.  To serve, transfer the sauce to a microwavable bowl, cover with a vented piece of plastic wrap, and microwave on High until just warmed through, about 2 minutes.
