Good Morning to All,
I have received several emails from fellow AR members asking that I share more seafood recipes here ...so occasionally, I will do just that.

This recipe has a long list of ingredients but do not allow that to discourage you from trying it.  It is not difficult at all and is an outstanding and versatile seafood dish.

Seafood Casserole                                                             

3 cups shrimp, cleaned (cut in half if large)

1 lb. crab meat (I use select)

1 lb. scallops (cut in half if very large)

8 oz. fresh, sliced mushrooms                        

l large onion, diced

l large green pepper, diced

1 - 10 3/4 oz. can cream of shrimp soup

1 - 10 3/4 oz. can cream of mushroom soup

1/2 cup long grain and wild rice (I use Uncle Ben's) cooked according to directions

1/2 cup milk (I use lowfat)

1 cup slivered almonds

2 tablespoons butter

Saute` onion, green pepper and mushrooms in the 2 tablespoons of butter until soft but not brown. Stir in all remaining ingredients except almonds.  Mix well.    Pour into a 2 quart baking dish, sprinkle almonds on top. Bake at 325 degrees for 45 minutes. 

Note:  You may use any combination of seafood or just 1.   You can mix together early in the day (or night before), refrigerate and bake when ready to serve.    Serve 8-10.

This looks good......I am not a cook, and know nothing about how to mix food......do you eat this alone, or serve with something else?   Umm, if I ever go to a Grocery Store I might try this, but better yet, I thinkI will give the recipe to my daughter to make :) :)

Cynthia, This looks like a wonderful recipe...and like it would serve a crowd with a loaf or two of fresh homemade bread.  Especially nice on a cool fall day after a day out hiking or at a sporting event....your recipes are the greatest!

that sounds quite delicious but my fiancee doesn't like seafood. Not only does she NOT like it...she takes a bite of any kind of sea food and she starts to dry heave...haha. So needless to say that I don't get to eat much fishy food.

You use RAW scallops and shrimp - right? 

The crabmeat is the only thing already cooked before being put in this casserole?

No, it is not difficult to make.  Sorry I'm so late getting back to you but I've been away all day. Use raw scallops and shrimp and as for the crab--I use the pasteurized (you know, the refrigerated, sealed cans).  Thanks for coming by and good luck.  If you have any more questions, let me know.  Oh, and the rice is cooked before adding but I think you were just asking about the seafood.

Cynthia, we all loved the casserole!  It was absolutely delicious with a green salad, some chunky bread, and a little white wine!  The son-in-law even took leftovers for lunch this week.  Thank you so much putting the recipe on Active Rain.  BTW it was easy to make and definitely worth the effort.  Betty

Cynthia, this casserole is so good that I served it again this week to out of town guests.  They loved it too.  This time I added a bread crumb, parmesan cheese, and melted butter crumb topping along with the slivered almonds.  Delicious!  Thanks again for the post.  Betty

I have never experienced anything like this recipe, it looks HEAVENLY.  I have never seen or heard of Cream of Shrimp soup.  Could it be because we are in the Rocky Mountains and not the ocean?!  I'm going to give it a try!
