What to do With all of Those Hard Boiled Eggs?
Oh, Easter Sunday was a beautiful day on the Crystal Coast of North Carolina. It was warm and sunny, and Easter Service at St. Francis by the Sea was FABULOUS! Thank you Father Everett! Now...what to do with all of those Hard Boiled Eggs? I love eggs. Scrambled Eggs, Fried Eggs, and yes I love Hard Boiled eggs too. So, here are just a few suggestions of ways to use those Hard Boiled eggs over the next few days....You certainly don't want to waste them!
- My first and favorite way is to make Deviled Eggs. My mom, of course, makes the best deviled eggs ever!
- Egg Salad.....YUM, Need I say more?
- Chop up a couple and add to a creamy pasta salad (It is especially good if you add a little bacon too).
- Top a big green salad with some chopped hard boiled eggs. Throw in some feta cheese, roasted red peppers and chick peas....You've got a great tasting, healthy meal.
- You can even make pickled eggs...I think they are GROSS, but To each his own!
- Add some egg to your favorite Potato Salad...shredded cheddar cheese, bacon...Eggsellent!
- Make a few more deviled eggs
- Slice the eggs, top with cheese, ham (from the leftover Easter dinner), and anything else that sounds good, slap it on a tortilla shell, and you have a fabulous breakfast burrito...If you are like me, Breakfast is good anytime of the day!
I am sure there are many other wonderful ways to enjoy those left over Easter eggs...These are just a few of my favorites. Remember, hard boiled eggs will last about one week in the fridge, so you can enjoy them ALL Week!
