Along with the fun, time spent with family, and candy, Easter always brings eggs—lots of eggs! National Egg Salad Week is celebrated annually the week following Easter. To help you figure out what to do with all of those eggs, we are providing you with these simple and quick ideas. So start cracking! Basic Egg Salad 6 hard-boiled eggs, peeled and chopped 1/4 to 1/2 cup mayonnaise Mix together the eggs, mayonnaise, and add seasonings. Seasonings To the Basic Egg Salad recipe, add some or all of the following ingredients to liven it up. All are to taste. Salt Seasoning salt Garlic salt Celery salt Dill week Paprika Pepper The Extras To make your egg salad extra special, choose from these great add-ins: Cubed Cheddar cheese Capers Pimiento Chopped celery Parsley French dressing Chopped green onion Green olives The Finishing Touch Serve your egg salad on your choice of bread. Toasted sourdough, English muffins, bagels, or even pita bread are great choices. Top with sliced tomatoes, purple onions, sprouts, or a slice of cheese. Ha!  That's funny!  We didn't do any Easter Eggs (no little ones), but yesterday I DID have a hankering for some egg salad!  Yup, lunch!  :)
