Today is the 1st day of the week and also marks the 1st day of the May Challenge, I think I am going to make everyone happy by sharing this Happy Punch recipe.

I went to a local merchant, The-Pitchfork-Gift-Home-Decor open house the other day, and they were serving this punch with some mini cupcakes to promote one of their lines that they are selling. It is pretty refreshing, so I thought I am going to kick off my challenge with this refreshing recipe, hope it may make you HAPPY, too!

Ingredients

1 (12 oz) can frozen pink lemonade concentrate, thawed
4 cups white cranberry juice cocktail
1 qt club soda, chilled
garnish with fresh mint sprigs

Preparation

Stir together lemonade concentrate and cranberry juice cocktail in a large pitcher
Cover and chill at least 1 hour or up to 24 hours
Stir in club soda just before serving
Garnish, if desired

Be HAPPY!!

Pat, those mini cupcakes are made by a local cake lady, they are sooo good. I usually don't eat frosting, but the way she makes hers is so good and not over sweet. They sure are yummy, haha.

Susan, I love to use proper ware for punch, cakes, tea sandwich, they just make the event so much more delicious!! Haha. I also agree the punch helps to make the event, I love to have a cup of good punch at any party! ;)
