Pumpkin Bread

From me to you.

 Ingredients

3 ½ C    flour                            1    C  salad oil

2     tsp  soda                           4     eggs

1 ½ tsp  salt                              2/3 C  water

3     tsp  cinnamon                    2    C (1 can) pumpkin

3     tsp  nutmeg                        3    C  sugar

¼    tsp  all spice

 

Directions

Sift dry ingredients.  Make a well in the dry ingredients and add remaining ingredients.  Mix until smooth.  Divide into greased & floured loaf pans.  Cook for 1 hour at 350 degrees.

This makes 2 large loaves or 3 smaller loaves.  Eat it warm or room temp.  Warmed is the best though.

This is the moistest pumpkin bread you will ever taste.  The kids will love it too.  For the good folks at Tea and Books - sometimes a warm piece of sweet bread goes good with a book too. :)  Enjoy!

yum... it sounds very like the one I make except that I cut up little bits of pecan to add to mine. There is nothing like pumpkin bread for the fall season!

There's just one problem to finding such a terrific recipe late on Friday night (well, two!):

1) That pumpkin bread looks so good, yet I'm certain there's none on my counter. What to do, what to do??

2) It is too late to bake!! ugh!!

If you like pumpkin bread you may also enjoy a cookie variation. If your interested try beating the following ingredients together in order to make Soft Pumpkin Cookies:

8oz can solid pack pumpkin

2-1/4 cup all-purpose flour

3/4 cup sugar

1/2 cup brown sugar

1/2 cup butter softened

2 tsp. baking powder

1 tsp. ground cinnimon

1 tsp. maple flavoring

1/4 tsp ground cloves

1/4 tsp ground ginger

1/4 tsp baking soda

2 large eggs

Beat all ingredients together and then drop in small spoonfuls on to cookie sheet. Top with pecan halves and then bake two inches apart at 350' for 18-20min.
