Be sure you use a fulley ripe banana. I've seen folks that did not like cole slaw go for a second helping of this one.
2 cups shredded cabbage
1/2 cup brated carrot
1/2 cup diced greeb bell pepper
1 cup crushed pineapple well drained
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 cup sour cream
1 large ripe banana
a dash of paprika
In a large bowl combine the cabbage, carrot, green pepper, pineapple, salt and black pepper.
Add the sour cream and mix lightly.
Cover and chill at least 2-3 hours.
At service time peel and dice the banana.
Fold into the cabbage mixture.
Garnish with paprika.
Serve on cold plates.
