This recipe is from an old cookbook I have called The Working Mother's Cookbook (the original printing), and is so-named because you can put the chicken in the marinade at night and with only a few minutes work the next evening, have a dinner fit for company. 

  • 4      chicken breast halves without skin -- boneless
  • 1      cup  Vermouth -- Dry
  • 6      tablespoons  soy sauce
  • 2      tablespoons  red wine vinegar
  • 2      tablespoons sugar (or 2 packets Splenda)
  • 2      cloves  garlic -- finely chopped
  • 1      tablespoon  ground ginger

Mix last 6 ingredients in a small bowl.

Put chicken (either in breasts or cut into bite-size chunks) into marinade and marinate for one to 24 hours.

Preheat oven to 325.

Remove chicken from marinade; reserve marinade.

Arrange chicken in baking dish so pieces don't touch.  Put in oven (not covered). 

Cook 15 minutes for pieces; about 20 minutes for breast halves.

Put reserved marinade in a pan.  Heat to low simmer and simmer for about 10 minutes. 

Brush chicken with marinade; bake for about 10 minutes more.

Can be served over rice or by itself, with a green salad.

Nima, I love rice, too, but I've had some low-carb clients and this is great for them just as it is.  (I have a program that I keep my recipes in that gives you the nutritional analysis so I can choose recipes that fit certain parameters.)  But I always serve it over brown rice.  I cut up the breasts beforehand into bite-size pieces, though you can do this, also, with just cut-up chicken pieces - harder to eat that way, though - or with whole boneless breasts.  Cut up into pieces, though, you get more marinade in the meat.
