Thank you Tricia Jumonville for your great Creole Shrimp recipe and reminding me that I have wanted to start posting recipes to my blog for my readers.  Here is my first...my mom's Creamy Pumpkin Pie recipe.  Very yummy, easy to make and low in calories too.  Enjoy!!

½ Cup cold milk

1 pkg (6-serve size) vanilla flavor instant pudding & pie filling

1 tsp pumpkin pie spice

1 cup canned pumpkin

2 ½ cups frozen non-dairy whipped topping, thawed

1 Keebler ready crust graham pie crust

In large bowl beat milk, pudding mix and spice with wire whisk for 1 minute.  (Mixture will be very thick.)  Whisk in pumpkin.  Stir in whipped topping.  Spread in crust.  Refrigerate at least 2 hours or until set.

Garnish as desired.  Store in frig.

Note:  May substitute ½ tsp ground cinnamn, ¼ tsp ground ginger and 1/8 tsp ground cloves in place of pumpkin pie spice.
