Yummy Chicken Casserole

By
Real Estate Broker/Owner with Hamm Homes

My mother use to make this and I have always passed this on to friends when they ask for the recipe.

Yummy Chicken Casserole

1 10 0z pkg. frozen chopped broccoli               2 tsp. lemon juice

2 Tbsp. butter                                              2 cup diced cooked chicken

2 tbsp. flour                                                 1/2 lb. fresh mushrooms, sauteed

1/2 tsp. salt                                                1/4 cup Parmesan Cheese, grated

1/4 tsp. pepper                                           12 canned refrigerated biscuits

1/4 tsp. nutmeg                                           2 cups milk

1 1/2 grated swiss cheese

Cook Broccoli and drain.  Melt butter in saucepan and blend in flour, salt, pepper and nutmeg.  Gradually add milk.  Cook until slightly thickened.  Stir in Swiss cheese, lemon juice, chicken, mushrooms and broccoli.

Pour into lightly greased casserole and sprinkle with Parmesan Cheese.  Top with biscuits and bake at 375 for 1/2 hour.  Makes 6 servings.

Hi Terri,  It is easy to make and does not take long.  I would say when I make it 3 out 4 people ask for the recipe.

That definitely sounds like some good ol' comfort food!  Will, I don't see how much swiss cheese to use.  Can you clarify?  Thanks!
