Gardening in Connecticut, Cucumber Season & Pickles.

 

Gardening in Connecticut, seems like once a plants starts producing it goes 110%, just like my work at real estate. With so many cucumbers I have been experimenting with pickles and here is my recipe that I am going to share with you.


16 oz clear glass Mason jar.Ct. Pickles ~ Dill in the back, Dave's Dirty middle, Dave Chives front

Cut 2 average cucumbers into 1/8 inch thick slices

1 small white onion thinly sliced

1 cup vinegar

½ cup water

½ cup white sugar

Pinch of kosher salt

Fresh dill.

 

Pack cucumbers in a clean mason jar with a few sprigs of dill, and sliced onion.

Combine vinegar, water, sugar, salt and the few remaining springs of dill in a saucepan over medium-high heat and bring to a boil. Pour over cucumbers in jar to top. Put top on tight and let cool on counter. Once cooled place in refrigerator, use next day, good for up to two weeks. If you want to store the pickles longer you need to sterilize the jars, Google for instructions.

 

You can experiment with other flavors, instead of dill try adding jalapeños or garlic to the jar. You can also buy pickling spices, I would recommend Penzey’s Spice Shop.


For Dave’s dirty pickles remove onions on above recipe and add chives along with a tablespoon of Balsamic Vinegar into jar and pour over hot liquid mix.

David -- This is funny. I was food shopping earlier and saw some beautiful pickling cukes. I thought that I wish I had my aunt's recipe. She was a master 'pickler'.  I am going to try your recipe!  Does it only take a day for the flavors to permeate?  Thanks!

Maggie, post your canning recipe, would love to see it.

Yes Barbara, slicing the cucumbers 1/8 inch along with pour the hot liquid in flavors the cucumbers fast. Very yummy the next day with crunch.
