I went to Costco recently to purchase their package of Foster Farms Chicken breasts. Wasn't I surprised that when I got home I picked up the Chicken Tenders, instead of the whole breasts? So, my purchasing faux-pas caused me to get creative. I had been planning on bar-b-quing up some chicken that night, but decided to take a different route.
Here's what I used for some Thai inspired Chicken Satay
Bamboo skewers
Chicken Tenders
Peanut Butter
Chicken Stock
Minced Garlic
Red Pepper Flake
Chopped peanuts
Cilantro
Soak the bamboo skewers in water for about half an hour to prevent them from burning. While those are soaking, mix up your peanut sauce.
I used one can (14 oz) of chicken sauce. In to that I added about 3/4 cup of peanut butter along with about a TBS of the minced garlic. Just heat over low heat till it's all mixed together and incorporated. Add in a couple of shakes of the red pepper flake. Probably about 1/4 tsp or so. (Add more or less depending on how spicy you like it).
Once your skewers are soaked, poke them through each chicken tender...kind of a weaving effect so they stay on. Brush all the tenders with your peanut mixture and grill. I actually used a small indoor electric "Char-b-que" grill for these instead of having hubby do them outside.
Grill them a few minutes on each side until done. When ready to serve, top them with some chopped peanuts and cilantro.
I served these with some white rice and some matchstick carrot slices that I saute'd in some olive oil then added a hint of ginger and nutmeg too. I reserved some of the peanut sauce for extra "dipping" along with some Thai sweet chili sauce.
