My Saturday Foodie Post - My version of a Thai-ish Chicken Satay

I went to Costco recently to purchase their package of Foster Farms Chicken breasts.  Wasn't I surprised that when I got home I picked up the Chicken Tenders, instead of the whole breasts?  So, my purchasing faux-pas caused me to get creative.  I had been planning on bar-b-quing up some chicken that night, but decided to take a different route.

Here's what I used for some Thai inspired Chicken Satay

Bamboo skewers
Chicken Tenders
Peanut Butter
Chicken Stock
Minced Garlic
Red Pepper Flake
Chopped peanuts
Cilantro

Soak the bamboo skewers in water for about half an hour to prevent them from burning.  While those are soaking, mix up your peanut sauce.

I used one can (14 oz) of chicken sauce.  In to that I added about 3/4 cup of peanut butter along with about a TBS of the minced garlic.  Just heat over low heat till it's all mixed together and incorporated.  Add in a couple of shakes of the red pepper flake.  Probably about 1/4 tsp or so.  (Add more or less depending on how spicy you like it).

Once your skewers are soaked, poke them through each chicken tender...kind of a weaving effect so they stay on.  Brush all the tenders with your peanut mixture and grill.  I actually used a small indoor electric "Char-b-que" grill for these instead of having hubby do them outside.

Grill them a few minutes on each side until done.  When ready to serve, top them with some chopped peanuts and cilantro.

I served these with some white rice and some matchstick carrot slices that I saute'd in some olive oil then added a hint of ginger and nutmeg too.  I reserved some of the peanut sauce for extra "dipping" along with some Thai sweet chili sauce.

Cheers!

Karen, it's great that picking the wrong package did noy discourage you.

After being in the restaurant business for years I learned that sometimes creativity comes from necessity (or mistakes lol)

Looks GREAT....................fit for a queen or king

Enjoy the day

Hi Don!  I will say that we will be enjoying "tenders" for a few more meals now!  lol  Thanks for the nice remarks and have a terrific day!  :)

Morning Bryan!  Hope your day is going well so far.  I hope you enjoy!  As I've mentioned, I rarely follow a conventional recipe or measure anything, so just have fun with this one!  The Sweet Chili sauce for dipping is a must.  Have a great weekend and I hope you and your family will enjoy.

Karen, Thai food - one of my favorites! I never tried to make my own peanut sauce - I'll have to try your version.

Hi John!  Our daughter-in-law is Thai so I try to take some inspiration from her.  I'm thinking some coconut milk added to the sauce would be good.  This was I'm sure a very American-ized attempt!  lol   Hope you are having a beautiful day.

Howdy, Debb!  We took a trip to Bali several years ago.  Chicken Satay was my meal of choice it seemed.  Have a great weekend and as always, thanks for your visit!
