This is super easy and a great tasting salmon dish! Southern Oregon is home to the Harry and David Corporation. They specialize in great gift baskets, and have some great products. I'm especially fond of their many different relishes that are great for making dips with. I generally keep an assortment of them on hand and found that one in particular is great on Salmon! Relishes can also be ordered online!
I had some small salmon fillets in the freezer that I took out and thawed. After they were thawed, they got topped with some coarse sea salt and fresh cracked pepper. Next, take about a tsp. or so of Harry and David Pepper and Onion Relish and spread on the fish.
I baked them in the oven at 350 for approx 8 minutes. These were pretty thin fillets so I didn't want them overcooked. Cook to your liking. I served these up with some steamed broccoli that got a squeeze of some lemon juice and smashed potatoes with a hint of horseradish. YUM!
