My Saturday Foodie Post - Pepper and Onion Relish on Baked Salmon

This is super easy and a great tasting salmon dish!  Southern Oregon is home to the Harry and David Corporation.  They specialize in great gift baskets, and have some great products.  I'm especially fond of their many different relishes that are great for making dips with.  I generally keep an assortment of them on hand and found that one in particular is great on Salmon!  Relishes can also be ordered online

Pepper and Onion Relish on Baked Salmon

I had some small salmon fillets in the freezer that I took out and thawed.  After they were thawed, they got topped with some coarse sea salt and fresh cracked pepper.  Next, take about a tsp. or so of Harry and David Pepper and Onion Relish and spread on the fish.

 I baked them in the oven at 350 for approx 8 minutes.  These were pretty thin fillets so I didn't want them overcooked.  Cook to your liking.  I served these up with some steamed broccoli that got a squeeze of some lemon juice and smashed potatoes with a hint of horseradish.  YUM!

I heard that relish is only avaliable a couple of times a year and very special. Sounds wonderful on Salmon.

YUMMO!! I seriously need to be posting more foodie blogs. I tend to stick to SEO and real estate but when I see yours it gives me inspiration to do more along those lines. I have so many pics of food I have made.. I should blog about it. Unfortunately tonight after a day at the water park its good ol PF Change's Orange Chicken.... from a freakin frozen bag! HA... SHHHHHHH don't tell anyone!

John...say that isn't so!!!!!!!  Seriously? Only available a few times a year?  I had not heard that.  I think a trip to their store tomorrow is in order.  

Tammy, agreed, girl you DO need to post more foodie blogs.  I remember you did a post on canning.  I'd love to see more of your creativity.  (oh, and mums the word...your secret is safe with me.  ;-)

Karen, if it's Harry & David's you know it's going to be good.  Once I had gotten some fruit from the super market and it was horrible, very dry and tasteless.  The next day a stop to pick up some from H & D's was like night and day.  A flavor burst and full of juice too.  You just can't beat 'em!  I'll be trying out this new recipe real soon.  Thank You.

Karen, totally looks like a very healthy dinner!     The salmon looks great, and will need to try it out!   That broccoli would not make it in my front door!    LOL

Hi Kevin!  Yes, most of their products are very good!  Funny...A client sent me a gift basket from Harry and David as a thank you gift.  Guess where the pears were from.  Chile.  No joke!  Unfortunately, we've lost so many of the pear orchards we used to have here that they have no choice but to go elsewhere for their pears.  Anywhosit...I hope you enjoy the salmon! 

Hi Joan!  We've really been trying to add more fish to our diet and I seem to gravitate to salmon most often.  As for the broccoli....with the lemon juice it really "lightens" the flavor.  I can even get hubby to eat it!  lol  Enjoy your day!

Hi Karen~ This looks and sounds absolutely Delicious! I love Salmon and I totally get the Pepper Onion Relish for sure. Your prep sounds awesome and I had to laugh at the "Smashed Potatoes" with horseradish.  I read the post to late to drop in for dinner :>)

Good morning, John !  We too really enjoy salmon. Seems to be the fish of choice I gravitate to most, although our neighbor went fishing on the river a few days ago and brought us some fresh Ling Cod over the weekend.

Jim...what's funny is that I've had this idea for a lunch delivery business.  Still in the research stage. :-)

Karen, I love salmon and love Harry & David, must bookmark for future attempt. BTW I guess the rumor that Harry & David is in Chapter 11 must not be true than?I hope!
