WHAT A FUNNY NAME...EGGPLANT

Right now, as I write this, I have some eggplant roasting in the oven. First off, they are inexpensive. Then, they fill you up so that you eat less. If that is not enough, they taste really good and can be fixed a variety of ways. I first cut some thick raw slices of the eggplant.

EGGPLANT PREP

 

Then, I scored it Crissy crossing on each slice. Add kosher salt and let sit for a bout 15 minutes. This draws out the water. Squeeze gently to remove as much moisture as you can and pat dry. Then, the fun begins to flavor the eggplant. There is no wrong here only what you like to do

DO YOUR OWN THING

Olive oil loves this stuff. Some Thyme, seasoned salt and different herbs bring out the flavors well. I like garlic too. I like the smell, and the taste of garlic not to mention it contributes to your health well being. Heat up your oven to 400 and in about 1 hour, you will have some serious roasted eggplant on your hands.

THE SMELL WHILE ROASTING IS A WORTHY EXPERIENCE

I am in a steady bathing through the nostrils right now of the combination of flavors of all that I have done permeating the whole house. My body is on alert and my tasted buds are ready to burst into action on command. This is not recommended to anyone who hates life or eating

FINISH IT OFF...YOUR WAY

Some like to add vinegar or lemon. Do whatever you want because you just cant mess this up

Enjoy whatever you do to the fullest

BELOW: The finished product of roasted eggplant staring at you. You don't need to join a gym because this is so filling and if you dare to make a sandwich out of this by adding tomatoes and lettuce, you will be full for most of the day not to mention the pleasure factor.

Called Shot Master

This looks delicious! I love eggplant!  I like to stuff eggplant with a mixture of ground turkey, onions, garlic,fine bread crumbs, seasoning of thyme, oregano and basil.   It's a complete meal.
