Eat Your Evergreens!

Christmas trees aren't just for trimming anymore!  Holiday-happy chefs now cook with clippings of pine, spruce and fir---and you can too!  Evergreen sprigs taste woodsy, similar to rosemary, and have that unmistakable scent of winter. 


Try this at home:

1.  Toss pine sprigs with roasted vegetables while they're still hot from the oven.

2.  Grind 1/2 cup each spruce tips and kosher salt with 1/4 cup coriander seeds and use as a spice rub for beef or lamb.

3.  Soak spruce overnight in 2 cups honey, then brush onto cooked chicken or turkey skin.  ENJOY!

Kristin, I learn a lot from your posts. I have seen chefs use some strange ingredients on TV shows but have not seen them use evergreens. Guess I do not have to worry about buying vegetables if there is snow and I cant go to the store.
