Yummy Yummy Mahi Mahi

So there I was, enjoying a lovely autumn Sunday.  Brett had just led the Packers to 7 & 1; life was good. What should I make for dinner, I pondered.  A nice piece of fish, maybe, so off to the store I trotted. The mahi mahi looked pretty good, so I brought it home, doused in a a salt water bath for 20 minutes (ice cold water, salt and ice cubes), then dried it with paper towel, rubbed it with a little red pepper-flavored olive oil and dredged it in a mild seafood rub (Old Bay).  Cranked the gas grill on high, seared it (meaty side down) for about 5 minutes, flipped in over to the other side, knocked the grill back to low and let it simmer for 5 more minutes. 

Simple.  Quick.  Out of this world. Served it up with some sliced fresh tomatoes, steamed green beans and crunchy french bread.

A splash of Chardonnay may have been involved, too.

Wow, thats sounds so good. I have to take a lunch break, wish I could get a tasty meal like that for lunch.

Sorry, Jessica, didn't mean to make your hunger pangs wake up!  But yes, it was surprisingly good!  And so easy!  In our business there are so many times we're heading home at 7:00 pm (or later), haven eaten since noon (or longer), don't want to go through the "fast food experience" again, but want something quick, reasonably healthy and better-tasting than left-over pizza rolls!

Phaedra, I think you & Jessica should get together & go to lunch!  Actually, though, I LOVE your town! My daughters and I spent spring break in Crystal Beach (and, of course, Tarpon Springs, Clearwater & Dunedin).  My brother had told me about the "Surf & Turf" grocery store on Tampa Boulevard so we went there the first day and stocked up on huge scallops, monster shrimp, succulent strip steaks and a couple bottle of Six Grapes Port wine. Had a great week.  Loved Clearwater and its beach.
