Secret Recipe Revealed - Pecan Pie

My brother absolutely loves Pecan Pie.  As my wife and both children are allergic to pecans (and other tree nuts), we don't have this in the house unless my brother is visiting.  It is a very tThose Nuts Taste Greatasty moist version of a pie that can be done very wrong.

Mom's Pecan Pie

1/2 cup brown sugar, packed

2 Tbsp. flour

1-1/4  cup light corn syrup

3 Tbsp. butter

1/4 tsp. salt

3 eggs

1-1/2 tsp. vanilla

1 unbaked 9 inch pie shell

1 cup large pieces of pecans

Mix brown sugar and flour in saucepan.  Add corn syrup, butter, and salt; warm over low heat just until butter is melted.  Remove from heat.  Beat eggs with vanilla.  Stir into sugar mixture.  Turn into pie shell; sprinkle with pecans.  Bake on lower rack of oven at 350 degrees for 40-45 minutes untill filling is set in center.  Don't overcook.  Cool before cutting.

It sounds delicious, Chris! Your brother is lucky that your wife and kids can tolerate having the pie in the house when he visits! :) One questions, you said this is a version of a pie that can be done very wrong. What did you mean?

Hi Nina - Something about pecan pie--some versions are dry and some are moist.  My preference is moist.  I have also been served hard pecan pie.  To me, that is "done very wrong."  : )

I've only had Pecan Pie once and it was so sweet I couldn't finish it.  But, since my husband is a huge fan of Pecan Pie, I'll keep this recipe in mind.
