Coca-Cola Cake:

  • 1 pkg. Plain White Cake Mix
  • 4 TBSP. unsweetened Cocoa Powder
  • 8 TBSP. Butter, Melted
  • 1 Cup Cola
  • 1/2 Cup Buttermilk
  • 2 Large Eggs
  • 2 tsp. Pure Vanilla Extract
  • 1 1/2 Cups Miniature Marshmallows

Cola Frosting:Cola Frosting

  • 8 TBSP. Butter
  • 4 TBSP. Unsweetened Cocoa Powder
  • 3 Cups Powdered Sugar, Sifted
  • 1 Cup Chopped Walnuts


 

This isn't MY original recipe, but I always "make things my own"  so it IS mine because I've changed it.  I do that with all my recipes. 

For the cake- you place the cake mix coco, melted butter, cola, butter milk, egss and vanilla into a mixing bowl and beat until mixed on low (scrapping sides of bowl) then for 2 minutes on medium speed. Fold in marshmellows.  Pour into 9 x 13 sheet pan that has been sprayed with non stick cooking spray. Bake at 350 for 40 to 45 minutes (ovens vary)

When cake is cooling heat butter over medium heat on stove, add coco (wisk constantly) add cola and bring to boil and remove from heat and stir in powered sugar and walnut.  Spread over top of cake with spatula. 

When I go anywhere that we "carry a dish" I can't go without taking my corn casserole... it's my Donald's favorite.  I read several and didn't really like any of the recipes I read so I took the "best" parts of several and  blended them into what I make.

  • 1 tube froozen corn
  • 1 can whole grain corn
  • 1 8 oz. cup sour cream
  • 1 Large Egg
  • 1 Medium Onion
  • 1 Box Jiffy Corn Bread Mix
  • 1/2 stick butter (divided)



On stove top mix corn and butter (add salt and pepper to taste) and heat over low heat.  Slice the onion super thin and Microwave with half the butter. Spread onion over bottom of 9x9 casserole dish.  Mix egg with sour cream and stir into corn mixture (removed from heat) and then stir in corn bread mix and pour over onions and butter in casserole dish.  Bake at 350 for 25 minutes.  (can be doubled, use 9 x 13 dish and increase baking time until middle is firm- about 20 extra minutes)

Glad I ate dinner before reading the recipes.  The corn casserole reminded me of my mom.  She had a similar recipe and she added some jalapeno peppers.  I made homemade butternut squash soup for dinner tonight.  Easy is my motto too.

I love butternut squash.  I even shred it raw in salad... so good and adds beautiful color and is really healthy.

Tammy I do the same I change the recipes to mine, because that way I will like it better, now this looks really good, of course to me anything with "cocoa" is good:))

Hi Tammy, I've never heard of using Coca-Cola for baking but your cake sounds delicious and I'll be sharing with hubby (as you know I'm a little challenged in the kitchen but he's just awesome).

Carla- me too.  The original called for pecans, but I love walnuts.  I also put some walnuts in my pecan pie.  Super yummy

Jacque & Larry- yes, photos are a must. :)  I can't help myself.  But lucky for me I'm not eating much of it.  That whole Gall Bladder surgery thing has me eating a bit more carefully.
