This recipe of Italian meatballs comes from my neighbor growing up in Rowayton, Ct. The secret to this is that the meatballs are baked in the oven. The family would make homemade pizza, pasta, sauces and more all the time and growing up I had the pleasure of eating over often.
Recipe.
1 lb. ground beef
1 lb. ground pork
1 lb. ground veal
1 ½ to 2 cups of Italian seasoned bread crumbs (depending on your taste)
¾ cup grated parmesan cheese (or Romano)
1/4 cup minced onions
2 cloves crushed/minced garlic
3 -4 tablespoons of chopped fresh parsley
1 cup of milk
2 eggs
Salt and pepper to taste
Olive oil
Directions.
Chop parsley, onion, and garlic, and set aside.
To a large mixing bowl, combine, pork, beef, veal, eggs, parsley, garlic, onion, salt, pepper, bread crumbs, cheese and the milk. Mix all ingredients WITH YOUR HANDS until well incorporated. If mixture it too dry, add more milk and repeat process. The mixture should be slightly moist, but not soggy.
Roll meatballs to desired size. I suggest about a 2 ½ inch long and 1 ½ wide, small egg shape.
Pre-heat oven to 425, put meatballs on tray and spray olive oil lightly over meatballs with mister, or just a drop per ball. Cook for about 25-30 minutes until a nice brown crust surrounds the meatball.
