I used to buy this dish at an Italian Deli and loved it so much I decided to make it myself. I asked one of the owners of the deli what seasonings were in the dish said she said salt, the entire flavor comes from the ingredients. So I started and cooking and after a few tries, I got it, compared it and now it's yours to try!
Sausage Scallopini
Servings 5-6
Time Start to Serve 2.75 hours
Ingredients:
1 ½ lbs Italian sausage in casing – Hot sausage if preferred
3 Italian long hot peppers or long sweet peppers halved by length then cross sliced
2 large red bell peppers, quartered by length then cross sliced
1 large onion, quartered then cross sliced
8-12 oz. fresh mushrooms sliced
1 (29-oz) can crushed Italian tomatoes
1/2 T. sugar (Optional)
4 T. olive oil
Salt to taste
How to make:
In large frying pan add water ½ inch or less and sausage cover and simmer for 10 minutes check water level turn sausage cook 10 minutes. Let cool. Cut into ¼-inch round pieces. Set aside.
In a large pot, heat oil over medium heat. Add the onions, mushrooms and a pinch of salt and stir 5 to 8 minutes or until onions are translucent, Do Not brown.
Add peppers and stir for 2 to 3 minutes.
Stir in the crushed tomatoes. Add sugar and salt to taste. Cook for 15 to 20 minutes over medium heat.
Add sausage, and then low simmer for 2 hours, stirring occasionally.
Serve over your favorite pasta with crusty bread. Enjoy!
