Here are some recipes that I have used that my grandmother taught me....if you love pie....these are sure to add a few extra pounds on the hips, but don't worry I won't tell.....Happy baking ! PECAN PIE INGREDIENTS - 1 3/4 cups white sugar
- 1/4 cup dark corn syrup
- 1/4 cup butter
- 1 tablespoon cold water
- 2 teaspoons cornstarch
- 3 eggs
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/4 cups chopped pecans
- 1 (9 inch) unbaked pie shell
DIRECTIONS - Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.
- In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and pecans. Pour into pie shell.
- Bake in preheated oven for 45 to 50 minutes, or until filling is set.
Apple Pie
INGREDIENTS - 2 (9 inch) pie shell
- 10 apple - peeled, cored and sliced
- 1/4 cup white sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
DIRECTIONS - Preheat oven to 350 degrees F (175 degrees C).
- Place sliced apples in a large pot. Sprinkle with sugar, cinnamon, and nutmeg. Mix well and cook over low heat, stirring frequently, until apples are tender but not mushy.
- Pour apple mixture into pastry-lined pie pan. Cover with second pastry shell. Seal edges and cut steam vents in top.
- Bake in preheated oven for 30 to 40 minutes, until crust is golden brown.
Apple Butter Pumpkin Pie
INGREDIENTS - 1 cup canned pumpkin puree
- 1 cup apple butter
- 1/4 cup dark brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 eggs, beaten
- 1 cup evaporated milk
- 1 (9 inch) unbaked deep dish pie crust
- STREUSEL TOPPING:
- 3 tablespoons butter
- 1/2 cup all-purpose flour
- 1/3 cup dark brown sugar
- 1/2 cup chopped pecans
DIRECTIONS - Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine pumpkin, apple butter, 1/4 cup brown sugar, cinnamon, nutmeg, and salt. Stir in eggs and evaporated milk. Pour into prepared pie shell.
- Bake in preheated oven for 50 to 60 minutes, or until a knife inserted 2 inches from the center comes out clean. Sprinkle streusel topping over the pie, and bake for an additional 15 minutes.
- To make the streusel topping: In a small bowl, combine butter, flour, and 1/3 cup brown sugar. Stir until mixture resembles coarse crumbs. Stir in pecans.
Homeade Apple Crumble
INGREDIENTS - 6 large apple - peeled, cored and cubed
- 1 tablespoon white sugar
- 1/4 teaspoon ground cinnamon
- Crumble Topping:
- 1/4 cup rice flour
- 3 tablespoons almond meal
- 2 tablespoons white sugar
- 2 tablespoons flaked coconut
- 1 1/2 tablespoons butter or margarine, softened
DIRECTIONS - Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together the apples and pumpkin butter. Spread evenly in a 8 or 9 inch square baking dish. Pour the pumpkin bread mix into a bowl, and cut in the butter until the mixture resembles coarse crumbs. Sprinkle over the top of the apples.
- Bake for 45 minutes in the preheated oven, or until the apples are tender enough to insert a fork. Serve warm with whipped cream.

Pecan pie is one of my favorites. I've made one once and it was great. We have a great Southern restaurant called Georgia Brown's in D.C. which makes a sinful Jack Daniels Chocolate Pecan Pie!
