Hi Patti, I love Kale and always want to make great salads-but it is very leathery. Do you take out the vein? Is there a way to chop it so that does not have such a leathery texture?
I love collard greens, but only had a kale salad once. Thank you for the recipe... maybe I'll try kale again.
Patty, I like the kale salad! It has a cruch to it like no other salad!
I'll pass this one to Ceil; anything green should be good. I like baby spinach leaves so I should like this with the olive oil dressing.

Joanna, I updated the post because of your great question. I do take out the vein, I rip the leafy part from the vein - once you pour the dressing on the leaf pieces, massage it all for a few minutes with your hands. This makes the leafs very soft. Gloves needed not only for hygiene but because you don't want to your hands to smell like garlic for a week!

Kale is one of our favorites too - we had kale soup with homemade French bread this evening and will be having it again tomorrow.

Patty, I’ve put kale in a few green drinks. This started over a year ago and I lost 13 pounds. I put the entire kale in the drink not just the leaves. I swear it tasted like dirt. I am going to give this recipe a try. I’m thinking if I stay away from the vein … it will be very tasty. Just the word vein says … don’t eat it. (LOL). Thanks for sharing the recipe.
Patty, I'm confused by your comment in #5 (Gloves needed only only for hygiene but because you don't want to your hands to smell like garlic for a week!) The cloves are put in the blender with everything else ...right? I don't get the hygiene part ... I get not smelling like garlic.

You got to massage the kale once you put the dressing on it - that's why you need gloves!

On a practical matter, if you massage the kale it loses its toughness and it makes for flavorful.
Sounds yummy, Patty. Have to try this especially the kale chips. Have to drag out the dehydrator or can I do it in the oven? What temp if I do the oven?
