THE BEST Cranberry Salad Recipe & It's  Easy!!  cranberries in a heart shape

We are cranberry lovers at our house. We wait anxiously for them to show up in the supermarket so we can have this fresh salad.  It is a real treat all winter, keeps well, is a snap to make, and is healthy for you. For the technical vegetarians, it is macrobiotic which means uncooked to us average folk.

 The Best Cranberry Salad!!

One package of fresh cranberries (10 -12 oz)

One  fresh orange, cut in chunks, leave peel on.

One half tart apple, cored, cut in chunks, leave peel on

1/2 cup pecans or walnuts

1/3 to 1/2 cup sugar ( I use 1/3 c we like it tart)

Put all these ingredients in the Cuisinart or blender and pulse-chop till blended into small pieces but not liquified.

Put into bowl and refrigerate for a day for flavors to blend. This will keep up to a week but it probably won't last that long!

Cranberries are loaded with Vitamin C (more than oranges) and is full of antioxidants. They also have an interesting history. Did you know that the largest cranberry producing state is Wisconsin?? cranberry plant

These facts came from Wikipedia, if you would like more information on the lowly cranberry.

"Since the early 21st century, there has been a rapidly growing recognition of cranberries for their consumer product popularity, nutrient content and antioxidant qualities, giving them commercial    status as a novel "superfruit"."

Looks delicious Bonnie.  I love just about all things made with cranberries.  This Thanksgiving, I tried Ginger Sala's cranberry stuffing that she had posted.  It was absolutely scrumptious.  You might want to post this in the Recipes group as well.

Bonnie,

I rarely eat cranberry but I drink cranberry juice. It is healthy and better than sodas. :)

Growing up in Wisconsin I had an uncle who worked in one of the cranberry bogs. Homemade cranberry bread is one of the best parts of the holidays!

I hope you do try it, Tom, it will go perfectly with your Santa Hat!

Thanks for the suggestion, Lola, I will post this to the Recipe group.

Cranberry juice is delish!  I'm not much of a soda drinker myself, Dave D., just too sweet for me.

Thanks for stopping by, John. Just about anything with cranberries is OK with me, homemade cranberry bread sounds like a great excuse to have someone over for coffee.
