2012 Fiesta Oyster Bake in San Antonio, TX

Fiesta Fiesta Oyster Bake 2012!  It’s that time of year again to enjoy some great entertainment and food at our Annual Fiesta Oyster Bake held every year on the grounds of my Alma mater, St. Mary’s University in San Antonio, TX.  This year celebrates the 96th year of this tradition, held during the beginning of Fiesta Week in San Antonio, TX.  For more detailed information see 2012 Fiesta Oyster Bake.

OystersWhat started out 96 years ago with a barrel of oysters, one keg of beer, charcoal, and the Fourth Illinois Band from Camp Wilson, Texas has turned into more that 35 entertainment groups, more than 7,000 volunteers selling 100,000 oysters(baked, raw and fried), 21 gallons of beverages(beer, soda, water, aguas frecas, etc.), and use 14,000 lbs of charcoal.  In addition, we sell more than 25,000 Chick-on-a-Stick orders; 6,000 Turkey Legs; 3,000 lbs of Beef and Chicken Fajitas, and many more favorite items. That first Oyster Bake 96 years ago was just a time for St. Mary’s alumni and the Marianists to reunite and share a few laughs and memories. Today, our Fiesta Oyster Bake is still about having fun and a good time with family and friends, but more importantly, it is about raising money for St. Mary’s University student scholarships and university and alumni programs.

During the past 15 years, Fiesta Oyster Bake has helped the Alumni Association to raise more than $6 million in student scholarships and university and alumni programs. The St. Mary’s University student organizations have raised nearly $700,000 for their programs.

Two new features have been added to the Oyster Bake.  A two day admission ticket for $30 will be available at all Texas HEB stores for those wishing to take advantage of a great deal for food and fun.  Great entertainment on both days, featuring some of the most popular national, regional,and local acts will rock the Bake all for one great price. Nearly 60,000 plus people are expected to attend Fiesta Oyster Bake this year. Be sure to bring your walking shoes, since the Fiesta Oyster Bake covers a lot of ground at St Mary's campus.

BeerShuckie’s Sports Bar, presented by Miller Lite, will be located in our Sponsorship Village area(Alumni Gym site) featuring covered seating, 4 large TV screens to view all your favorite sports programming and additional beer booths to help quench your thirst.  


Fried Cheesecake and Fried Corn Nuggets are two new amazing food items for your mouth watering food selections. Come on out on April 20 & 21 during Fiesta week in San Antonio, and help support and raise money for this great cause at our St. Mary’s University campus, which started back in 1916.

Yummy!  The Fiesta Oyster Bake in San Antonio sounds like an amazingly good time, Jerry!  I hadn't heard of fried cheesecake before, but it sounds delicious!  No wonder San Antonio is such a desirable place to live!

Hi Kevin. I don't always believe what I hear in the News Media these days. They often to show both sides of the story. I am sure the prepared food has passed some type of inspection.
