Recipe: Polenta with Mediterranean Sauce

Temperatures in the Greater Sacramento region dropped several degrees, and produced overcast skies today.  It’s perfect weather for this family favorite recipe.  Perhaps your would enjoy it too!

POLENTA WITH MEDITERRANEAN SAUCE

Ingredients:

  • 1 pound of lean ground beef
  • ½ pound pork sausage
  • 1 yellow or white onion - finely diced
  • 4 cloves garlic minced
  • ½ pound mushrooms - chopped
  • 1 red bell pepper - diced
  • 2 zucchini chopped
  • 1 can of diced tomatoes (28 oz)
  • 1 can tomato paste



Herbs and spices: Salt, Pepper, Fresh Oregano, Rosemary, Marjoram, Thyme, Bay-leaf and Basil, used to your preferred taste. 


Also Needed: 

  • Package(s) of Polenta
  • Cheddar and Parmesan Cheese - Grated

Directions:

In large stockpot, brown the ground beef and pork sausage together.  Drain fat.  Add in onions and garlic, cook together for a couple of minutes.  Add in the mushrooms and zucchini and the diced tomatoes with tomato paste.  Also, add in desired herbs and spices.

Simmer for a couple hours.

A few minutes before sauce is complete, begin cooking the polenta according to directions on package.

To serve - Use large bowls or deep dish plates.  Place a layer of polenta (mush consistency) on the bottom of the bowls or plates, on top place a layer of the sauce, with a layer of the grated cheeses.  Repeat the layer process one more time and serve.

Jeanne and Ralph - On cool days, this is one of my favorite recipes.

Laura - The recipe is really adaptable, so make your favorite sauce, and try it.  I've also made beef stew, and layered it in, instead of the sauce.

Tom - It is yummy...or at least I think so:-)

Tony and Darcy - If you like cornbread and the idea of putting layers of cheese and sauce on top of it, then you ought to like this.
