Mexican Style Corn on the Cob

 

 

If you are a corn on the cob lover.....you will want to try this great recipe

 

 

 

 

 

 

Mexican Style Corn on the Cob



Ingredients
12 ears of corn (so good each person will want two)
2-3 cups of Cotija cheese
1 cup of mayonnaise
3 limes, quartered
cayenne pepper

Steam or grill corn, 5-7 minutes.  For each earn of corn:

  1. spread mayonnaise on corn
  2. roll corn in cheese
  3. Sprinkle cayenne pepper, and
  4. squeeze lime on corn.

Good morning Rebecca -

Oh what a tasty treat your grilled cob corn looks like!  We love grilling corn on the BBQ!  We leave it in the husk, wrap in foil, and toss it on the BBQ or campfire.  Then peel back the husk , add butter and paprika and bingo.... Yummy!!!  If this juicing diet wasn't working so well I'd say let's head to the market and grab some fresh corn for lunch :)

Rebecca~ This might be something I would try.  Can you get the cheese in the grocery store, or do you need to go to a specialty store.  I've never heard of it.

Elotes?  That's what I believe it is called.  I have had it twice at a festival. There was a restaurant here that had it on their menu but they never had any left when I got there.   I am going to have to go to the Mexican grocery store and get the cheese.
