PERFECT PATE FOR PENNIES!
Let me begin by saying I really really dislike liver, immensely. That goes for any of the organs that people insist upon eating such as kidney, heart, gizzards . . . Blech !
Why would anyone destroy a perfectly good Steak Pie by polluting it with Kidney?
I digress . . .
I will admit to absolutely adoring seared Foie Gras and also Pate. If I purchase Pate it will normally be Duck that I choose.
However, I received a text message today from my husband, asking that I pick up a baguette for supper as he had gone ahead and prepared 4 ramekins of Chicken Liver Pate for us! (my husband isn't really a cook)
It all began with him not being able to resist a bargain of any sort . . .
$1.56 for a pound of fresh chicken livers - score! (I'm not so excited but he was)
So he decides to take out my favourite big, copper bottomed fry pan and he melted a scoop of bacon fat into the pan (not healthy I know, but tasty)
He sliced up an onion and cooked them til translucent (he's been watching the food channel)
Then he dumped the chicken livers, as is, into the pan and kept mucking about with them til they were browned.
To this he added 1/2 cup of nice red wine (and more for the chef I think), some salt and pepper, with about 1 teaspoon of dried thyme.
He allowed it to all simmer together for a few minutes and then added in some fresh herbs we had growing on the windowsill. (I'm thinking it might have been parsley!)
He hauled out our Food Processer and poured the entire mixture into that and 'whirred it up' til it was smooth. Then he added 1 cup of butter to the mixture til it was 'well mixed up' .
He poured it into 4 ramekins and put them into the frig where they will sit for the afternoon.
I'm guessing that the combined cost for this Pate is going to be:
$1.56 for the chicken livers
$1.28 for the butter
Wine, onion, thyme no charge as they were just hanging around doing nothing anyway!
So $2.84 divided by 4 = .71 cents per Ramekin
Add in .98 cents for the baguette and you've got a fabulous starter or meal (depending on how much you eat) for $1.69 for two people!
Okay, I can't wait for supper . . .
We decided to go ahead and eat the Pate as an early appetiser, it smelled so good.
Normally we would eat it on little toast points but not tonite!!!
