CHILLED  CUCUMBER, COCONUT MILK SOUP WITH AVOCADO - good enough for Vegans!!

(You will need a blender or food processor)

1 large English cucumber - remove the seeds if you use a regular cucumber.  If you want to peel it, go ahead but I don't bother most of the time. More cucumber is good too!
1 ripe Avocado
handful of Cilantro
1 clove of garlic
1 green onion
1 lime
1 can of Coconut Milk
shredded or peeled coconut for garnish

Coconut Water to drink and/or thin the soup!

In the blender, add the cucumber in chunks, the flesh of the Avocado, Cilantro chopped, garlic cut in pieces, green onion cut in pieces and blend til smooth.

Zest the lime and then add the juice to the blender.

Add the Coconut Milk and blend until desired thickness is achieved.  I've added Coconut Water to get it thinner sometimes.  (Plus, the Coconut Water is great to drink)

You can either serve immediately or store the blender in the fridge to chill.

Add lime zest and coconut as garnish and ENJOY!

Sounds yummy.  Is this an "approved" recipe for me to try since I'm trying to "take it off in the rain"?

Susan. This sounds yummy. Since we started taking out the seeds on an English cucumber for our salads, I have noticed how much more I enjoy the taste.

Sally - 26 for you guys is like being on the sun.  I hope this soup can help keep you cool!

Roger - it is on my plan but I'm not too sure if it is on yours!

Valerie - I hate seeds in anything I cook.  It does make a difference removing them.

Shannon -  Yikes; hope you can keep your cool somehow!
