Chocolate Covered Strawberry Pie inspired by Pinterest

I was looking at pictures on Pinterest , trying to figure it out. Next thing I know I saw this great picture of a Strawberry Pie. So I decided to Pin it. Next thing I know is one of my friends on Face book commented on what a great picture and recipe this is. She knows I am a cook, hence she requested a pie or at least leftovers…. Hence this created a quest for finding a recipe on how to make Strawberry Pie.

I knew the most important part of making the pie is to have sweet, fresh & good strawberries. Then since making chocolate covered strawberry pie ones has to have good Chocolate, hence I believe to make the best you need to get the best. Hence I needed Ghirardelli Chocolate to complete the perfect Pie.
So then after looking at various recipes I decided that this one looked like the best:
1 cup of heavy cream
½ cup of sugar
1.5 tea spoons of Vanilla Extract
Whipped together until it was thick and firm
Then in another container whip together Philadelphia Cream Cheese (I used 1/3 less fat)
½ cup of sugar
1 cup of melted dark chocolate chips (soften for about 1.5 min in microwave)
Whip all this together
Then combine both items. While you are doing this bake the Pie Crust. My favorite is Marie Callender’s Frozen Pie Crust.

Once the Pie Crust is baked & done, add the filling and stuff it with as many Strawberries as you can fill it with. In the meantime melt two more cups of Chocolate Chips and drizzle over the top. Once you are done than place pie in Refrigerator to set and in about 10-20 minutes it is ready to be served.

Yum! When are you coming over to cook for me? LOL! Enjoy the pie! Can't beat fresh fruits during the summer to throw something scumptious together.
Jennifer up late we could exchange some food and wine:)))
Endre, those strawberries look so delicious! and I love Ghiradelli chocolate, my favorite. Thanks for posting the recipe.
Endre,
The next thing you know is that this is making one hungry in Orange County.
Than the next thing you know is another chocolate covered strawberry pie being made.
I give that less than 5 minutes in our break room....
Hi Endre -- still laughing at Rob Spinosa's comment --- so true!
We are so lucky that there are so many fresh fruit choices available in the stores, farmers markets and in our own yards --- the ways to serve them are endless or we can simply eat them the old fashioned way -- just the way they are.
Uh, Endre? You didn't mention how it tasted. Was it as good as it looked? Better? We need the full review!
Endre - You're not playing fair. I've been on a diet for over two weeks and showing off this amazing pie just caused me to gain back 5 pounds back!!!
Pamela I was in a rush so I did not make the crust, but I could see it being done with an Oreo type crust would be even more chocolaty:))
Pete honest it is not that difficult I had so much filling from the above recipe that I actually made two pies:))
Rob, Diane took one to her office and I think your Time Line was similar:))
Michael how true, yes the bulk of it was eaten the "old fashioned way":)))
Dick my take was too sweet:)) I would cut back on the sugar, but I am not big on sugar, the other people in Diane's Office were full of complements, so go figure:))
Laura why diet? It takes up too much work & energy it is easier to get a new wardrobe:))
Thanks for the recipe and the review. I know that I will end up making this for Himself. And, the need to know is cut back on the sugar a bit....thanks.
It looks like a keeper!
Suzanne I love chocolate but not a big fan of sugar or salt so I prefer less but did not want to mess with the recipe, next time I know:))
Endre: This looks really good! I can imagine those strawberries from Whole Foods market made like this!
Endre - I just gained 3 pounds reading this!!! LOL. It's a good thing I'm allergic to strawberries. Looks easy enough and sounds YUMMY!!!
Endre, the only thing missing for me was whipped cream or ice cream! Definitely have to try this one soon :)
Sharon
Janet actually it was from a road side Strawberry Truck seller:))
Juli I have heard of a lot of allergies I am sorry to hear that you are allergic to Strawberries, TG not to wine:))
Sharon I did want to make this "healthy" so I skipped the ice cream & whipped cream:))))
Charita, glad you are intrigued by the pie:)) It was well received by all who had tasted it:)) As far as Pinterest I just look at it as hopefully one more place to get future referrals and if not great pictures.
