July is National Blueberry Month and July 30th is National Cheesecake Day. Any excuse for a celebration, right?
So here's a taste of the Blueberry Cheesecake bars I made today.
They're sweet, but not too sweet. And the shortbread crust is delicate and buttery. The cheese filling is smooth and cold and sweet, and the blueberries swirled throughout are tart and fresh and bursting with blueberry flavor.
