Food and Beverage sanitation thru Electro-Chemical Activation of WATER
'Electrochemically Activated Water' (ECA), is a process involving the electroc-chemical activation of regular water with a small amount of salt added to create a light saline. The machine splits this water/salt mixture into two separate streams, (1) a positively charged stream known as 'Anolyte,' which kills bacteria, fungi and viruses on contact--completely non-toxic, safe to ingest, etc., this Anolyte breaks down into a weak salt solution in 48 hours (no disposal problems, on-site creation); and (2) a negatively charged stream known as 'Catholyte,' which acts as a detergent, removing layers of fat and protein, is also non-toxic (in fact it is an anti-oxidant and is said to be beneficial to health.
Anolyte has been used successfully in the food and beverage processing to:
1. Decontaminate carcasses in chillers overnight by means of fogging with an Anolyte mist. This process has the added econominc benefit of reducing carcass mass loss during chilling as well.
2. In treatment of offal and sausage casings, shelf life was shown to be extended by weeks at ambient temperature.
3. Along with the cleaning agent Catholyte, which removes fat and protein deposits, Anloyte has been used successfully to sterilize utensils and surfaces--product contact areas can be kept continuously clean (Real TIme Sanitization)
4. Anolyte can be added to tap water incoming into processing plants, thereby reducing bacterial counts, whereas Catholyte was used to remove biofilm from piping--studies and data available. It can also be frozen and used in ice for seafood applications.
Current installations include major Coca-Cola bottlers, food processors and abattoirs.
