Delicious Ice CreamSomewhat in a philosophical mood with this post. With the pursuit of happiness thought I think I see too many people doing the PURSUIT part and not landing or embracing the HAPPINESS part along the way. I have a simple thought to help anyway struggling with happiness to stick in your hat,

  Happiness Is An Ice Cream Cone.

What I mean by that, life inside a day is full of moments. FIND those happiness points with people, with loved ones, with pets, with nature, with play, with relaxation,

ENJOY THE MOMENT. It might be a song on the car radio, or a sunset, or someone's smile or even some communication to you via an email, text, Facebook comment or tweet.

See it for what it is. FOR THAT MOMENT, there it is HAPPINESS.

Just like an ice cream cone in your hand. How can you not be happy at that moment????

I have dairy issues and if I eat too much I have a sinus reaction so when I have ice cream it is a real treat and is greatly appreciated.  Too many people take for granted little things like ice cream....and too many people miss those small moments of happiness!

Keep cool with this recipe....

Maryland Gazpacho Soup Recipe    

6 cups chopped tomatoes

1 ½ cups chopped cucumber

¾ cup chopped yellow pepper

¾ cup minced onion

3 or 4 jalapeno peppers-minced

1/3 cup olive oil

5 Tbsp. vinegar

½ tsp. minced garlic

¾ cup water

1 can  (8oz.) tomato sauce

Salt and pepper to taste

Prepare all ingredients in a large bowl. Refrigerate overnight. Serve with shredded cheddar cheese and croutons.  

There is no cooking.  Gazpacho soup is served cold.

This soup is delicious.  The recipe is from the Heirloom Tomato Festival in Westminster, Maryland.  Tested and recommended by Dolores Kelley.
