The third Friday in August is celebrated here in the Hawaiian Islands to commemorate the event when Hawaii was admitted to the Union in 1959.  It's known as Admission Day or Statehood Day.

When I remember that we moved to Hawaii in 1980, it was only 21 years of being a state then!  That seems like such a short time really and I don't think we really appreciated that fact.

For a treat to celebrate we're making fresh toasted coconut, with just picked coconuts, and honey from a Haiku Maui neighbor.  The grated coconut flesh was so juicy that it was good to let it sit and dry in the air for an hour before putting into the oven.

I can't begin to tell you how much we love living in Hawaii, in Maui, in Haiku.  There is so much you can grow and cultivate in your garden to enjoy all year round.  The climate is very even and agreeable.  Renewable energy resources are everywhere to be found. Hawaii really is the best state to live!

Georgina~you are right to feel so lucky to live there--count your blessings every day! We love Maui and we got married there with some traditional Island ceremonial pieces intertwined in our wedding ceremony. It was a most perfect sunset and filled with joy! It sprinkled on us, and our minister, a woman, said that that was good luck. I loved every minute of it. We got married on Ulua Beach at sunset with a couple fishing in the water in the background as our only attendees.

It doesn't get any better than that.

Georgina - how interesting that Hawaii is that much of a "new state."   It sounds like you celebrated in style.  I think the next time I plan a trip to your wonderful island of Maui, I'd like to be there for this celebration.

I have not been to Maui yet but I have loved my visits to Big Island and Kauai.  If I could live there I would 100%..There is a different spirit flowing through the islands sand it beckons.  You are so fortunate.
