Each year my pear tree puts me to task finding ways to put up the fruits of it's labor. One recipe that I always use for some of the fruit is a family favorite - Pear Honey! The consistency of the end product is just like honey but with a pear kick to it!
You will need: 8 pears, unsweetened pinapple juice, and sugar. 6-8 small canning jars, and hot pack canning set up.
Peel and chop the pears, add one cup juice, add 8 cups sugar, bring to boil over medium heat stirring frequently. Once mixture reaches full boil reduce and cook until the consistency and color are similar to honey ( make sure not to over cook ). At this point I let it cool a bit and then I run it all through the blender - this is an added step I take to increase the similarity to bee's honey. Then I reheat and then can.
Great stuff on a peanut butter sandwhich, or one Client of mine said she puts over vanilla ice cream. It can be used for just about anything you would use honey for.
