I made some prickly pear margaritas last night and they were  a big hit.  Hard to believe that something that comes from a fruit that looks so uninviting could be so good.  I am sure you can buy several prickly fruits and juice them yourself but I like this prickly pear puree. You can order the prickly pear puree from this website and they have included a margarita recipe as well but mine is better!

Makes two drinks

4 oz Silver Tequila

1/2 oz Orange Liquor

2 oz fresh lime juice

2 oz prickly pear puree

coarse salt with crushed red chili pepper flakes

 

Combine all the ingredients in a martini shaker except the salt and chili pepper flakes with ice.  Shake until combined.  Salt the glass with the salt and chili pepper flake mixture and serve.  Pass around the remaining chili pepper and salt to be added in the drink because it tastes so good! Enjoy
