Fall brings thoughts of comfort food....and that to me means apples....baked, fried, candied, raw... whatever way you like. If you like apple pie, you will love the below recipe......
Apple Pie Baked in Apples
5 to 6 Granny Smith apples (that can stand on their own)
- Pie crust, homemade or pre-made
Cut off the top of 4 apples and discard. Carefully remove the inside of each apple with a spoon or melon baller, not punching the peel. Salvage as much as you can for the filling.
For the filling, remove skin from remaining apple(s) and slice very thinly. In a bowl, mix apple slices and apples salvaged with cinnamon and sugars. Spoon filling into hollow apples.
Roll out pie crust and slice into ¼ - inch strips. Cover the top of each apple with pie crust strips in a lattice pattern.
Place apples in an 8-by-8 inch baking dish. Add just enough water to cover the bottom of the dish. Cover with foil and bake 20 to 25 minutes. Remove foil and bake for an additional 20 minutes or until crust is golden brown and apple slices are tender.
These are best served with ice cream, of course. Yield: 4 servings

TIP: To the right is a cheap recipe holder... a great way to have your recipe in sight and not in your way while preparing food.
Enjoy the Fall season and go pick some apples!

How cool, little individual apple pies, I love it, and the recipe holder too, very clever.
Lewisburg is trailing in the contest, maybe it's time to do another post and ask members to vote. I've been voting every day.
