A Flower By Any Other Name Could Be A Vegetable - These flowers looked so good just hanging out at the market.

The noble cauliflower found it’s way to France from Genoa in the 1600’s. It did not show up in aristocratic circles until Louis XIV.


Cauliflowers come in many varieties and colors although these are the most commonly seen. Being low in fat and carbohydrates and high in fiber, folates, water and vitamin C means they are super healthy. They can be roasted, steamed, boiled, fried, and eaten raw. (The central white core is delicious raw).

Being low in fat and carbohydrates also means they can be used as a substitute for mashed potatoes in a low-carb diet. The taste and look like potatoes but don't have the starch.

Hi Toni: I agree with Jeanne & Ralph.  There's an Indian dish called "buni gobi" that uses cauliflower, and I really enjoy it.  It's also good covered with melted cheddar cheese (although probably not as healthy!).  Thanks for sharing!  :)

Love them also and I also love them in all their glorious colors.  My favorite way is to salt them coat them in olive oil and garlic,  then stick them in a hot 450 degree oven, till they start carmelizing.  Happy Tuesday. A

Your on to something, Toni!  Just today I had to think for an instance to remember if avocados were a fruit or a vegetable.  Of course vegetables don't grow on trees:-)  Some foods make the mind bend a bit.
