Try my Delicious Spinach Salmon Salad with a Touch of Autumn!

This morning I went for a 4 mile walk with my dogs and came home starving for a good nutritious salad for lunch. Please try my recipe.

 

Spinach Salmon Salad

Ingredients

8 oz of fresh Spinach- rinsed and dried.

1 large Orange- Peeled and cut up 3/4 of orange into small bite size pieces. Reserve remaining 1/4 of orange for dressing.

1-2 Green Onion- Chop the top and about 1/2 inch of stem

1/4 cup of plain Greek Yogurt (use mayo if you do not like yogurt)

6 oz piece of Salmon- grilled or baked 350 degrees for 7-10 minutes with a sprinkle of seasoning rub (do not overcook)

1/8 cup (1 oz) of finely grated cheese- I prefer the 4 cheese mix in bag but it is your preference.

1/8 tsp fresh orange zest from orange peel..

1-2 Tablespoons of pure orange juice squeezed from left over orange.

Slivered Almonds to sprinkle on top.

 

Dressing

Squeeze the remaining ¼ orange and  throw out all but juice.

Mix  1/4 cup of plain Greek Yogurt, stir in orange zest and orange juice. Mix in small bowl.  Let sit on counter and get to room temp

 

Combine

Stir in most of dressing together with spinach leaves. Put on a serving plate.

Take warm salmon and slightly break it apart with a fork and lay over spinach.

Sprinkle the chopped oranges and chopped onions over the salmon.

Drizzle rest of dressing over top.

Sprinkle the grated cheese and slivered almonds on top.

 

Enjoy- Salmon is one of my favorite foods and I just thought adding a touch of autumn to the salad would make it yummy. Here is a picture of it.

Hi Chris, Yes any meat would make this salad good. I usually put cut up chicken in everything so salmon is a treat. It is so healthy so I try to eat it once or twice a week.
