coconut banana baked oatmeal
First of all, I love this girl's blog! The Oatmeal Artist has absolutely TONS of simple and yummy recipes. One of those that I tried recently and love is Coconut Banana Baked Oatmeal.

Just a few ingredients and it's a great make ahead breakfast option - I am NOT a morning person and anything I can make ahead is ideal.

Oats, coconut milk, baking soda, ripe banana, vanilla and shredded coconut combine in a breakfast (or snack) that's absolutely delicious!!!

My notes: I double or quadruple the recipe to make enough for leftovers, and added unsweetened shredded coconut into the oatmeal before baking. Right out of the oven it's best eaten with a spoon :)
