Shepherds pie

I had some ground beef that needed to be cooked and I wanted to try something different so I made a Shepherds Pie.  It turned out very nicely so I decided I would share the recipe.  I put the shepherds pie in two different meat loaf pans so that we had a meal for today and one for another day.  Next time I will use either lamb or a lamb/beef combination to get a more authentic Shepherds pie flavor.

1 lb lean ground beef, browned

1 large yellow onion, chopped

1 clove of garlic, chopped

2 C of chopped vegetables-carrots, celery  use your imagination

1/2 C beef broth

1 tbls of flour dissolved in water for thickening

1 tbls of soy sauce

Saute all the ingredients together

5 large russet potatoes

1/2 C sour cream

1 tbls butter

Mash together then add

Chives to taste

salt/pepper to taste

4 oz of Manchego cheese grated

Put the meat mixture in the bottom of a meat loaf pan, spread the mashed potatoes on top of the meat mixture and then grate the cheese on top.

Preheat the oven to 400 degrees F, cook until the cheese is browned and the mixture is heated through which is about 30 mins.  Please enjoy a very hardy and traditional meal
