Cranberry Salsa
12oz fresh cranberries*
1 medium apple, peeled & cored (I use Granny Smith or tart green apple)
1/2 lg red pepper cut into chunks
1/4 medium red onion cut into chucks
1/2 cup (or slightly less) sugar or sugar substitute**
1/2 cup apple juice or cider
3 Tbsp. fresh cilantro
2 Tbsp. chopped jalapeno (more or less depending on your preference)
1 tsp. grated lime zest
Put cranberries, apple, red pepper & onion in food processor & pulse until chopped.
Transfer to bowl & add other ingredients.
Cover & refrigerate for 30 minutes or more.
Serve with your favorite cracker, pita or tortilla chip!
Great recipe for casual get together with friends or family
*Fresh cranberries are only available in the fall. Buy an extra bag and freeze.
**Made with sugar substitute means fewer calories so go ahead & have another taste.
