Thanksgiving Dinner – It’s all about Preparation

 

Today’s Thanksgiving Dinner was non-traditional.  Since I was cooking for only two of us, I just didn’t feel like cooking a 20 lbs. turkey. 

Here is the menu below:

Curried Chicken:

Prepared Chicken ready to be Cooked














Jerk Fish:

Uncooked and readd














JAMAICAN PUMPKIN (SQUASH), ASPARAGUS:

Pumpkin ready to be cooked

 

Bulger, Sweet Potato, Green Bean:












 

It took me 2.5 hours from start to finish to prepare the meal.  It was delicious.  It was very healthy, and we have enough to last us for the entire week

Lloyd, I just finished cleaning up my kitchen and it is 1:35 AM!  I must add that thanksgiving is also about the clean-up!

Lloyd,  Looks like a very healthy meal. Dave & I had our quiet, romantic dinner for two after setting up the Christmas tree.  Instead of whole turkey we purchased turkey thighs at local grocery store.  Much easier and less clean-up.

I would love to have your recipe for curried chicken.  I have one for curried ham that I will post next week.
